Laguna Quilotoa, at 12,000 feet above sea level, is a must see destination in Ecuador. The emerald lake is in the center of an active volcanic crater. The trek down to the water’s edge is easy, but you can ride a mule back up. The hikes at this elevation are stunning. Renting a kayak is possible to glide across the cold, slightly salty and sulfuric waters. At this height ewe can even train to climb and conquer higher peaks such as Cotopaxi or Chimborazo.
If hiking isn't your thing, try horseback riding through the deep eroded canyons, or up through the mystical cloud forest in the Iliniza Ecological Reserve or galloping across the Andean highlands.
There is also the possibility to visit colourful local indigenous markets, multiple artisan cheese factories, and a fine craft woodworking shop.
